Wife is going to the Bahamas for a week of business and we don't want to rack up a ton of expenses on communicating. She'd like to be able to check her e-mail on hotel wi-fi and we'd like to be able to text each other (I'm staying here in the states and have iPhone 4).

Is this all she needs to do (AT&T is her provider if that has any bearing):

Settings->network->cellular data off
Settings->network->data roaming off

Settings->messages->iMessage on
Settings->messages->send as SMS off

Does she get a lot of texts from others? If not, it might be worth the $10 plan for 50 international texts. Your WiFi iMessages are still free, but then you don't have to worry about being connected to get a hold of each other.

Yeah...she'll go through 50 in a day from all of her employees. Only a few are on iOS 5 for iMessages.

On my AT&T phone (Blackberry), I have to have data turned on to use wifi.
