Can latest IOS of iPhone 4S be jailbroken?

I have never Jailbroken my 3GS, or 4S, but always would like the ability to do it.

If I take the lastest update, which i have not done (the one that says its 4G), 5.1.X?, will I still be able to do any Jail Braking?

Yes, you can do this. You need the program Absinthe to do it. Look here for more info.
