I didn't know that mold could grow under these conditions

Yesterday morning, I took some bread out of the freezer to defrost. When it was defrosted, I noticed there was mold growth on the bread.

Are you sure it is mould and not freezer burn? Can look a bit like mould and is common on bread left in the freezer.

Likely freezer burn. Consider. Mold requires two things (aside from the presence of mold spores): heat and humidity. Neither of those conditions exist in your freezer. However, if the mold spores were present prior to freezing and you left the bread on the counter for 48 or more hours, it _could_ grow. But, I doubt that is the case based on your post.

I've seen explosive growth in the Summer

I think the bread goes in the freezer extra damp from humidity and when it thaws there's enough extra moisture in the bag to help induce explosive mold growth.
Likely didn't go in the freezer free of mold either

Once bread is frozen I'll take out just the slices or english muffin I'm going to use as individual slices thaw out fairly quick.

No surprise about the explosive growth. People may tell you otherwise, but, the reality is that mold spores are everywhere! You can clean to your heart's content and still have mold spores in your home. That's one of the reasons it's so important to keep your windows closed and reduce the heat and humidity in your home via air conditioners. It isn't just to make sure home more comfortable. That's an added bonus. It's to help prevent any mold spores that are floating around (or have settled) from growing. An air purifier helps, too. 'course, not much you can do if the mold is already on your bread and the conditions are ripe for growth. sad smiley

I have been seeing an increasing number of loaves from major bakery brands develop mold quickly during the summer months lately. Don't know if it points to issues in their bakeries, packaging, or to the increased use of corn syrup as a sweetener. Both types of corn syrup keep the bread moist, an aspect people seem to be calling for, but are more hygroscopic than sugar and will absorb even more moisture from the atmosphere. That moisture also encourages mold growth. I have even had to return a couple loaves in recent years that showed mold before I even opened them, and were definitely before their sell by date.
