How to tell gorgonzola cheese has gone bad ?

It's already blue.



It was pretty far back in the fridge, but it was pretty good on the BLT.
I crumbled it on the tomato and maybe the tomato acid will neutralize any bacteria that does not belong.



Back to work.
It's a cold but beautiful sunny day here.
Great to be outside.

what I've heard about these cheeses that are made by injecting the mold, which causes the blue "veins:" If you see mold that's a different color than the veins, or on a different part of the cheese, throw it out.

God I hate that stuff...

back in the old restaurant days, i always wanted to throw the stuff out - it's bad by definition... (btw, don't go to a cheese factory in your formative years like I did)

But we settled on this rule: when the blue areas turn predominantly green and much of the white stuff is closer to yellow, dump it

or send it to paul...

Yellow and green are bad mold colors..


At least, they are when you're drying pork loin for Lonzino...

Tastes change as you get older. I used to primarily drink pilsners, now I want something that's much more flavorful.

Gorgonzola, or some other "moldy" cheese, is mandatory for a real pizza ai quatro formaggi.

I still hate liver.
