FTT: Beets !

Beets. Wonderful beets.
I never used to like them much.
Now I do.
I [successfully] grew some really great ones this year.
I had an exceptionally large boiled one last night for supper.
IT apparently contained a fair amount of betanin.

My food transit time last night was 14 hours.
12 to 24 hours is supposed to be pretty good.
Yippeeee!

I've always loved beets. However, to really get a flavorful beet you need to roast it, not boil it.

boil to remove skin
bake/boil in oven in ceramic crock uncovered with one inch of water, not immersed.

I was traumatized as a youngster when my mother would put beets on my plate and the the juice would run all over and get on everything's else. So thanks for triggering a very unpleasant memory. drool smiley

anyway, I find FTT can be helped by a myriad of items: coffee (caffeine in any form is good, but coffee gives it that extra whoooooosh), fruit juice, veggie juice (I like kale/apple/carrot/ginger) and, of course, the old fave - prune juice. also, no meat! none! no meat! that will stop everything up real good.

You can try using beet juice as a dye, but you might need a mordant.

Used to think so myself... until I had some good oven roasted beets with butter, salt, and pepper. Mmmm...

Also a fan of some beets in a borscht.

Absolutely LOATHE cold pickled beets, and canned beets. Something happens to the texture there... and yuck.
