What do the color codes mean?

Not much, apparently. Seven colors rotate in date order. Each release follows the next color except those released on the same date.

Might have been interesting to use those colors to highlight the branding from “Rhapsody” to “Mac OS X” to “OS X” to “macOS”.

You mean in the versions chart? I don't think they have any significance. Just makes it easier to read. Note how the color scheme repeats. It's from the Wikipedia article on OS X.

The person that made it is one of those people that puts a color tag on every damn file on their hard drive. I have friend like that. Before the OS moved to little dots, his finder windows (in list form) were always a blinding cacophony of color.

Notice the long lags between 10.3 and 10.4, and 10.5 and 10.6. That's back when Apple actually put some thought into making improvements to the OS, rather than rushing to get a new version out every year. Ah, the good old days...

Actually I think back then it was an 18 month cycle. Enough time to get their @#$%& together before it was released, instead of us being their beta testers on version .0, .1 and .2

In fairness, except for 10.6, Apple was writing the OS for two different types of processor (PowerPC and Intel). 10.3 didn't support Intel in the public version, but Apple was working on the switch to Intel processors for most of the life of OS X.

Here's an improvement:

Logos/box-art of Mac OS X. From left to right:
(Box 1) Mac OS X 10.0 (Cheetah)/10.1 (Puma) (Cheetah and Puma shared the same box art)
(Box 2) 10.2 (Jaguar)
(Box 3) 10.3 (Panther)
(Box 4) 10.4 (Tiger)
(Box 5) 10.5 (Leopard)
(Box 6) 10.6 (Snow Leopard).
The icons for 10.7 (Lion), 10.8 (Mountain Lion), 10.9 (Mavericks), 10.10 (Yosemite) and 10.11 (El Capitan) are shown as well.

and "Kodiak"
