Cooks, what do you use white pepper for?

I nearly bought some today. But, I don't have any situations where the black flecks bother me or any guests.

When you are OCD . Jack Pepin used to say Julia Child didn't want to see pepper flakes in white sauces . But he preferred black .

Solid white/light colored foods like mashed potatoes or butternut squash soup?

With the skin of the red, ripe berry removed it has a slightly milder flavor. That dried skin also helps to stop the pepper seed from going stale so for the same reason you likely buy whole peppercorns you'll want whole white peppercorns and hope they are fresh.
For even milder pepper flavor you can sometimes find peppercorns that were picked before they ripened and turned red.
USe skinned or 'white' peppercorns mostly for aesthetics though, as you can sprinkle more or less to taste.

Once on your plate it is your dish and no longer the chef's.

Milder flavor. Gives that pepper taste but without the spicy note that black pepper has.

It's often used in Asian-style dishes—not for the color, but for the different taste. I don't consider it milder, though.

I used to use it in béchamel sauce to avoid the black flecks, but when the bottle ran out I never bothered replacing it.

Occasionally I make a pasta sauce with a ridiculous amount of freshly ground pepper, and sometimes I use white pepper, sometimes I use black. The black has more heat to it.

I use white peppercorns when I'm making chai masala but I'm not sure it makes a big difference. I think there's a difference but in a double blind experiment maybe I'd be unable to tell which is which.
