my bananas are still green!

Every time I buy the organic bananas, they stubbornly refuse to turn yellow.

Not sure what's going on. I buy organic a few organic bananas about twice a week. I always buy them slightly green. They always turn yellow. I get them from Whole Paycheck (Whole Foods).

I've had this problem, myself.

Put your green bananas in a paper bag for about 24hrs after bringing them home. The bag will trap ethylene gas from the plants and kick the ripening/yellowing process.

If you're stuck with green, starchy bananas days after bringing them home from the market, and it's too late to try the paper bag trick, stick them in the oven at 350 degrees for about a half hour. Skin and all. Baking them will get them soft and sweet and edible. Don't use a non-stick tray for this. The oils from the skin will discolor it.

Seven... Hmm...

For some variety, peel some (can slice the peel with a knife if it's too tough to peel), slice into thick slices, bake at 375 for a half hour on a greased cookie sheet with a light sprinkle of salt on top.

Store them with oranges or onions. I don't know why, maybe the ethylene thing too, but it seems to accelerate ripening.
