My wife just had brain surgery a week ago. She is heavily sedated to keep her from moving around with all the wires and tubes going into and out of her body.

I am inundated with concerns from many people.

I would like to be able to produce a daily update and message all those people. I will need to be able to add or delete names from this group.

First, virtual hugs and hopes for your wife's recovery.

Are you looking for email or SMS group management ? Apple's hardware gets weird with groups because of the mix of iMessage and SMS recipients. I will be watching this posting to see if there are any good solutions, I've got a group management issue as well.

You can make a private group on Facebook. You would approval people who ask to join and only members could see the posts. Some details are in the link below.

You just need to decide what method everyone will read these message updates from you.

Text message / iMessage?
Email?
A private website?

Think about the people you're updating, and their technical ability. If it needs to be super-simple, it will need to be a method that everyone can understand and access without much help.

This. let people manage whether they want to read updates or not by themselves. not something you should need to keep track of.

Unless everyone is on an iOS device, I would avoid using text messages. My son has complained that adding or deleting Android users from group text messages is a real pain.

You can create contact groups on either you Mac or thru the iCloud website. Unfortunately, you can't create groups directly in the iOS contacts app. There is a free iOS called Groups that enables you to do so.

A 5 second recording done in Voice memos.app is 20kb.
Save to Files.app
Click hold or force click, and Add People
Share Options, choose according your prefs.
Copy link, share as you wish, maybe ask some of your contacts to help sharing the link.

I think group texts in general should be avoided. The way they work can be so annoying you could have a lot of people wanting to leave the group.

We recently went thru something similar with our family. The person sending out updates alternated between text, facebook and email. I would say email was the best choice as everyone receives it reliably. Best wishes to you, your family, and a speedy recovery to your wife.
