Have a couple of old packages of sliced mushrooms, keep or toss?

Stilltasty only gives 'em 4-7 days... [www.stilltasty.com] ... surprising to me that they don't last longer.

If they stayed cool and dry they are likely edible, though the texture probably suffered.

we've sauteed old sliced mushrooms, figuring that the heat will kill anything that might otherwise kill us. So far we're still here...

Mushrooms attract moisture, and are sort of gross when they get old, and barely recognizable in taste. IMO.

See, that's what I thought too. It surprises me that they have apparently such a short shelf life. That being said, I know fungi produce toxins... and like the eggs I posted about awhile back, it may not be worth the cost to take the risk of having a bout of gastrointestinal fun.

The ones I have, are in unopened packages and have been refrigerated the whole time... but they seemed to darken VERY quickly after purchase.

In future, it looks like the best way to keep them is lemon juice + steam blanching, then freezing, which doesn't sound too difficult.

Mushrooms are best as fresh as can be. Think of them as meat. That's why mushroom hunters forage in the woods and then drive straight to a restaurant with the fungi. Now, a little soft part is not bad but I would avoid anything that has changed color for sure.

Slicing is also part of the problem. Damaged cells along the cut are more susceptible to decay and spoilage. Whole mushrooms can last a bit longer.

Yep that's what I thought too. Just still surprised that they're so perishable.

White mushrooms will start to look bad before they really are.

Well, I've seen them grow hairs in the fridge. That's it for me. I toss them.

Ha. Good point.

Actually, I think you’re safe. People are rightly wary around ‘shrooms because of a few bad actors like Amanita which kills a few folks every year. But the mushrooms you buy in the store can’t just suddenly make those toxins.

Well, I guess that depends on your store, though. wink smiley
