Pico de Gallo

I'm sure everyone has a favorite recipe. We have a bunch of Health Kick tomatoes ripe for picking and I'm disappointed in their taste just eating them plain. However, they're similar to Roma is size, shape and texture, so I'm going to use them for some Pico de Gallo.

Tomatoes, onions, cilantro, lime juice, and salt and pepper are a given. But beyond that, some people use green bell peppers, some use jalapeno peppers, some use parsley instead of cilantro, some add fruit...you get the idea.

Lots of recipes out there, and I know it couldn't get much simpler, but I'd love to hear your personal favorite recipe. Thanks.

I use red Italian onions, as well as green onions. I prefer lime juice over lemons, and I add the zest from the limes. And Pico de Gallo without cilantro is just plain WRONG...grinning smiley

Yeah lime and cilantro. You can add stuff, of course, but you need lime and cilantro for sure.

Oh my recipe: tomatoes, red onion, and mild jalapeno.

I like a roughly equal mix of red bell pepper, cilantro, jalapeño, and pineapple. It's sweet and crunchy. If the tomatoes are sort of bland, then you can add in a few without altering the sweet hot flavor.

Tomatoes (seeded), red onion, cilantro, finely diced jalapenos, and I like to add either small chunks of fresh pineapple or firm mango - even a diced cucumber can add a textural element.. Besides the lime, a splash of vinegar can brighten the flavor.

Thank you all. My mouth is watering just thinking about it. And we recently harvested some small candy onions that we can use and avoid the store-bought onions. A few farm stands around here, too. We should be good.

There's a Mexican restaurant in Oxford, AL that has the best I've ever tasted. I have asked and it's a lot of cilantro and a lot of jalapeno.

I like pico, but can't tolerate it much anymore. Tomatoes give me heartburn. Can't tolerate red sauce on my pizza anymore either. I can have it at lunchtime, but not at dinnertime unless I want to wake up in the middle of the night with the back of my throat burning.

I made a big batch of gazpacho the other day and realized the ton of similarities.

Sub bell peppers for jalapeños
Sub parsley for cilantro
Add chopped cucumbers

I like to garnish both with sour cream (or nonfat plain yogurt) and avocado

Eat pico with bean chips (corn allergy) and eat gazpacho with sourdough bread.

I'm very OK with tomato salad.

No cilantro would be my preference, but fortunately, I hardly notice it in El Pollo Loco's version.

Costco was selling a somewhat big container of some brand, and it was more than good enough for me.

But I don't know how well it keeps.

The El Pollo stuff seems to go bad in a few days.

Usually those quantities don't last nearly that long.
