Does maple syrup ever go bad?

OK, here is my 'old food' question for the week. I have an old bottle of pure maple syrup, that is the only ingredient listed on the label, that has been stored in the fridge since it was opened. It is well past its expiration date, more than 3 years past to be exact. It looks fine, smells fine and the tiny bit I tasted, tasted fine. I know that some things with a high sugar content will crystallize, but this looks OK. Is there any reason not to use it?

BTW, maple syrup is expensive and I need just a small amount for a recipe, so that is why I don't just throw it out and get some more, plus that is wasteful. grinning smiley

According to my boy who's rather familiar with syrup & trees, the syrup should be totally fine as long as there is no mold on it. If there is mold on it, bring the syrup to a boil, (a slow boil unless you'll have a mess). Skim off any of the scum and then just throw it back on the fridge.

And even then, it would take a long while and a nasty fridge for the levels of sugars of break down and let bacteria and mold in. It's so highly concentrated in sugar acting a natural preservative that it should be fine.

An old time maple farmer told me years ago that if the maple syrup ever developed any kind of growth to scrape it off and then boil the syrup for a few minutes.

Once it's boiled, it was good to go.

I kept (and still keep) maple syrup for years and do not hesitate to buy it by the gallons.

We keep it in the pantry. Same goes for ketchup and A1. Have never seen them go bad.

okay, ketchup, A1, Worcestershire, and soy sauce ARE in my fridge. And so is the maple syrup, now. i'm not putting the honey or molasses in the fridge, though. that's just wrong.

which is exactly why i'm not putting mine in. actually, that reasoning is why it never occurred to me to put the maple syrup in there.

Someone said ketchup was OK. I have a couple unopened bottles on the pantry shelf but the contents are a much darker red than I recall at purchase. I'm inclined to pitch them and never buy more than one bottle at a time (caught up in a shopping trip to Costco)

Maple trees don't seem to have much of a problem with age.

I bought a rather large container of real maple syrup 3 or 4 years ago (after buying one and not keeping it in the fridge and having mold pour out ) and at the rate I'm depleting it, its got about 5 years remaining.

The price per ounce got me.

That brownish ketchup is good to cook with, olnacl. Make yourself some barbecue sauce. A prepared sauce with as much acid in it as ketchup will keep indefinitely, but there may be some degradation in color. Ever notice how your vinegar is fine after years in the back of the cupboard? It's 5% acid.

That's not maple syrup on tables in those greasy spoons . It's "maple flavored syrup".

And it's not Heinz ketchup in those bottles, either. The prop. fills them every day out of a big jug of Acme ketchup. Glug glug.
