I made sarsaparilla from extract this weekend. It was a fun, easy project, and it tastes good! Here's my blog on how I did it. [yakimabeerman.blogspot.com]

I have Sassafras trees they make it from growing here. I tried making it from the root before the internet, so I didn't have any instructions. I may give it another try. They also make gumbo filé powder from the leaves.

Be careful with that stuff--I don't remember the details, but there is some version of sarsaparilla that can cause cancer.

It is a little bit like root beer, more zippy on the tongue though where root beer is smooth.

I brew root beer about once a year. I use Zatarain's extract.
