Just Crack an Egg

Sustainability...please, more reusables and fewer throwaways. With all of the throwaways we accumulate from take out dining, the least we can do is avoid them when cooking at home.

Interesting.
My wife bought a '1 egg pan' some time ago. I've started using it for making pan open omlette...
dab of butter
melt on medium heat.
two eggs, scramble in pan with silicone spatula
add bacon bits or pieces of smoked sausage
add chopped green onions
add diced tomato
pepper and other spices
1 tbsp pancake mix
mix
top with shredded cheese
Let cook until brown on bottom.
Flip, cook until not saucy
