aaah! i just ate some undercooked chicken!

I cooked up some chicken breast this afternoon. I used a temp probe to be certain it was cooked completely.

a few hours later i dig in. after taking a few bite i notice that the chicken is rather pink looking and perhaps that explains the not-quite-right taste. and that temperature probe alarm did go off awfully quick.

i stuck it in the microwave for a few minutes, well past the normal hissing and popping that indicates warm food. Its no longer pink.

What do i do next? I suspect that i should try to forget it. And maybe have some scotch. (alcohol kills everything, right?)

Don't panic.

What we do is eat some yogurt with live bacteria, to offset any nasties from the bad stuff.

Probably not a big deal.

You worry too much. I second the yogurt suggestion, although that's probably not necessary. I've eaten undercooked food many times through the years, and something else besides food poisoning is doing me in. I would have preferred the food poisoning - quicker.

Wait, you under-cooked it, then ate it a couple HOURS later?

If you don't feel the irresistable urge to bow before the porcelin altar about about 8 hours, then I think you'll be fine... but that gap with undercooked chicken and when you ate it will be the cause of your undoing if it does indeed undo you.


Have a little baking soda and water bottle handy later tonight...
If you come to the conclusion that the technicolor yawn is inevitable, having less acid in your stomach will make it hurt less.

Was it chicken brought up in cramped pens full of chicken poop and mass slaughtered and stirred around in giant seething with bacteria pots of other chickens (i.e. mass market chickens from the regular supermarket), or was it a chicken individually nurtured by virgin maidens, fed sumptuous three-course meals in beautifully landscaped spacious chicken coops and gently dismissed after a fruitful life by caring and spiritual caretakers? (the kind from the local overpriced organic grocery store). If the former, hari kari is probably your best bet.

For what it's worth I only save up and eat the overpriced kind. Although those prices are getting better here in the happy valley.

If you'd have snarfed it down within a few minutes of half-cooking it, you'd be fine...
But letting it sit a couple hours first? Oy... I can practically hear the sound of battalions of jack-booted bacteria marching for your colon..

FYI: the Chinese would eat garlic along with "questionable" meals, it supposedly neutralizes the bad bacteria. yup, just cloves of garlic either chewed up or chopped along with some bird pepper or some similarly hot pepper.

I have done this but cooked the garlic with olive oil and hot pepper, poured it over pasta or cooked greens. seems to work.

As long as the internal temp got high enough to kill the bacteria initially you'll be fine.

Letting food sit for a couple of hours is OK.

If the chicken sat for four or more hours at temperatures between 41-135, then you might have a problem.
