Anyway to insert the command symbol in email? I am using Mail. How will it appear in Exchange?

System prefs=>Keyboard=>check "show character pallette in menu bar"=>Characters=>(view) all characters=>technical symbols (select).

Edit-- so it seems it will most likely show up as a question mark on the recipient's end. Probably do need to use a graphic.

What I usually do is do a google search [en.wikipedia.org] and then just copy the character.
