They already do make faux granite crown moulding, which is basically a thin textured concrete base outer coating over a foam core, and is no heavier than many wood mouldings. I'm guessing the jury is still out as to whether or not it's catching on.

I think they use granite crown molding at the vatican (or is that marble?).
