Spiced Nuts recipe

Yes, it's that time of year...


The time of year to spice my nuts, of course! I'm thinking Almonds this year. Any recipes for spicy nuts? I have a boatload of almonds, so I really think any recipe will have to incorporate these.

Also, if you know of a good peanut brittle recipe (that does not use corn syrup), pass it on.

I make some spiced pecans with some cayenne, allspice, cinnamon and ground pepper and a little salt, tossed in melted butter and maple syrup. I don't know how it would do on almonds--but for a regular can of nuts, you can take half a stick of butter and a third of a cup of maple syrup, and heat that up in a skillet. Once the butter is foamy and the syrup is hot, add a half teaspoon of cayenne and a teaspoon each of the allspice, cinnamon and pepper. Toss the nuts in the mixture till they are well coated, put them out on wax paper and let them cool. It's a very spicy mix. If the nuts are salted, omit the salt.

I have no idea whatsoever how to make peanut brittle without corn syrup. I didn't know you could do that!

Come to think of it with almonds, which aren't as strong a flavor as pecans, I would substitute paprika for the cayenne and cut the spices to a half teaspoon each. You could give the syrup a taste to see if you like it before you toss your nuts in there.

If you don't want to use corn syrup, cream of tartar would do the job as well. The reason most recipes call for one or the other is because they prevent the sucrose from crystallizing.

Chocolate Salty Balls - South Park

Two Tablespoons of cinnamon, and 2 or 3 eggwhites
Half a stick of butter, meeeelted..
Stick it all in a bowl baby, Stir it with a wooden spoon
Mix in a Cup of Flour, you'll be in heaven soon
Say everybody have you seen my balls?
They're big and salty and brown
If you ever need a quick Pick-me-up
Just stick my balls in your mouth!
Ooh, suck on my chocolate salty balls,

Quarter cup of unsweeted chocolate, and half cup of brandy

Then Preheat the oven to 350°, and give that spoon a lick
