(Apple) Mail question - From/To displayed name order

When I receive emails in Mail, sometimes the name of a sender (in the From field) is transposed, including people that are in my address book. I might have two emails from the exact same person come in within minutes of the other message, and the names will be in different positions in each; i.e. Joe Blow or Blow, Joe. What causes this?

If you look at the headers in the email, the difference can probably be explained there.

In some cases, there will be a name embedded there and in others there may not be one. Perhaps the sender has his/her name configured differently on his/her iPhone vs Apple Mail or Outlook... If there's no name in the headers, Mail will helpfully fill in from your Contacts (when possible).
