1) The more pixels over 4k, the more bandwidth it chews up preventing any other devices on that set of Thunderbolt ports reaching full speed. 2) A 27" 4K display is already essentially a retina display, so increasing the pixel density is a waste unless the panel technology allows: wider viewing angle, wider gamut, or contrast.
