At any one time, I've got about 190-200 apps listed as having updates in iTunes.

Many of them are freebies, games I don't have installed, or apps I don't wish to update.

I wish iTunes was capable of displaying updates in something other than icon view, but I guess in Apple's mind, everyone updates everything all the time, so no need for a more efficient method. Just like the browser makers who think the maximum number of tabs open is about five, and design accordingly.

Based on my observation, ~200 also seems to be about the upper limit, because once I cleared out a number of more recent updates, a whole batch of apps last updated in the Oct 2013 timeframe appeared.

I wish the App Store had an option to delete an app when it's updated.

You can Control-click (right-click) on any app in either Purchased or Updates and choose "Delete" in the contextual menu that appears.

I understand. Sure.

What I'm thinking is like in apple Mail - if the app is listed to be updated, swipe left to delete it instead...

I'm convinced some developers use updates to get people thinking again about their app.

First, you need to state you are using an iDevice and not on a Mac. I can't help because of lack of knowledge. I do all of my housekeeping on the Mac.
