It must have these specs:

Wired
Stereo (or binaural, apparently a newer buzz word)
Boom mic
Versions for both 3G and 5s 'Phones
Decent quality for both the mic and headphones
Circumaural (though I might have to settle for supra-aural

I've been Googling for awhile, and all I've found were USB types, or cans with no compatibility mentioned.

Does anyone have any hands-on experience and recommendations?

I may have to go with some "PC" headphones (separate mic and headphone plugs) and use an adapter.

I think that you're overcomplicating things. Pretty much any headset with a 1/8" / 3.5mm audio jack will work.

The only compatibility that you need to worry about is if you want some sort of specific controller (i.e., volume). Even then, I've found they generally work.

These should work, but I have no personal experience with them.
B&H should have something that would fit the bill, if not these.
