The healthiest way to cook mushrooms is to microwave or grill them to preserve their goodness, researchers say.

These cooking methods significantly increase levels of antioxidants which protect cells against diseases, but boiling or frying reduces them.

Wrong on both counts:

1. The study was a spanish study "Mushroom Technological Research Center of La Rioja,"

2. British food may have sucked 20+ years ago, but today it is light years better, and generally better than most american food, both nutrition-wise and taste-wise.

Also, I am not going to pay any attention to this study because I eat mushrooms for the flavor, not the nutrition.

My wife watches a British baking show and I have to say it is astounding. I don't know about British food in general though.

That was my experience visiting the UK for my honeymoon in 2011. My Italian wife could not understand why I had given her warnings about UK food, since even the fast food at KFC and McDonald' tasted better than in the US.

My partner and I just finished season one tonight. Crazy good amateur bakers. Love the judges too.

I loved the first two seasons of GBBS. I got out of the routine of watching it at the times my current PBS station shows it, so I have missed season 3.

For the original topic, I think any cooking method that results in all the moisture being cooked out, will reduce the good stuff left in the mushrooms. I would like to see if the study included the sauce/residue after cooking because I have thought it contained most of the things that had been removed from the original food.

Last time I was in London half the food was imported from France as were many of those serving it.
and stale as you would expect food having been prepped up to 24 hours in advance. Disconcerting the number of decent pubs that had been replaced by fast food and chain operation crap . To find a decent restaurant one had to get off the main streets where rent had gone sky high and only chains could subsidize the high rents.

As opposed to other people who only simmer it?

It really is the only way to cook tough cuts of meat such as tongue etc.
