Olive oil and butter.

It only takes a dab of butter to flavor olive oil.

...Also, sliced pickles and tomato inside.

As long as some of the cheese goes on the outside of the bread, as well as the inside... makes for a nice crunchy, cheesy, delicious, crust!

Why is this thread only about the fat product spread on the bread? The fundamental issue is the type of cheese. I say....sharp cheddar, preferably a high quality american product (e.g Tillamook) or a nice english farmhouse cheddar.

and if it isn't good garlic bread I like to season the pan with a little butter and some fine ground garlic ahead of presenting the sandwich to the pan.
Anything else is not grilled cheese. It might be grilled cheese + and there's nothing wrong with that, just don't call it grilled cheese.

Mayo?!?!?! Ok, I can't say it's gross, since I do use mayo, but I'd honestly never thought of it.

Try asiago, too. A combo of cheeses is very good. Lots of butter is key to the pan frying.

I've heard of using mayo, but didn't try it. I usually make these for my wife, and she hates mayo. I love using lots of different cheeses as well!

I do see that spreading the mayo evenly on the exterior surfaces of the bread would be easier than cold hard butter. How about home made olive oil mayo?

I cheat and use a Cuisinart griddler press FWIW.

Butter outside, sharp cheddar slices inside. It's great enough that I haven't felt the need to use my favorite cheddars (eg Black Diamond or Coastal Rugged Mature Cheddar Cheese).

My dear deceased mother thought a grilled cheese consisted of toasted buttered white bread with a slice of American cheese. It was the only way my little sister would eat one. I never knew what a real grilled cheese was until I made my own later in life. In fact, I never ate cheese when I was a kid.

In fact, I never ate cheese when I was a kid.

Neither did I until I had a rare opportunity to have a 'school lunch' which was tomahto soup and grilled cheese, but without the butter, if I recall correctly. And that was the beginning of one of my Favorite Simple Meals.


Butter outside, sharp cheddar slices inside. It's great enough that I haven't felt the need to use

...anything else. I'm no gourmand, so that works for me. I do wish I knew what cheese In-n-Out uses on their burgers. It's very tasty, and it would work well, too.

A co-worker once told me 'You know, mayonnaise it pretty good! It's like you white people's soul food.' That cracked me up.

I love real mayonnaise, no Lite for me. I use it on burgers (with ketchup and mustard, et. el), on hot dogs when not using ketchup and mustard, tunafish and ham and tamahto sandwiches.

A versatile spread.

I actually use none of that stuff. I grew up putting the grilled cheese between two hot plates (turned the waffle iron into a griddle) and ate it that way. Yummy good, thin grilled cheese!

That's exactly how we ate it,.as.my mother had (probably still has) a press that turned into a flat side griddle. I never knew grilled cheese was not squished until much later in life. Maybe the press is an Oster...?

If you put anything other than cheese inside the sandwich it is no longer a grilled cheese. Not that it isn't good, just that you can no longer call it a grilled cheese. I stand firm by this fact of life.

Butter is ideal, but try this if you're going to use mayo on the outside in lieu of butter: Use a spicy flavored mayo instead of the regular kind.

Instead of just "fatty" and sweet, it gets tangy and sweet.
