Make ginger juice with it, and then freeze that into small cubes for easier storage.

Be careful with this thing. It will slice your finger open if you're not careful. Wear some sort of protective glove when you're using it.

This close to Christmas? Gingerbread! Even better with chunks of actual shredded ginger in it since my main complaint with most gingerbread is that it's too weak and contains very little of the real thing.

I'm no baker (never had an oven that heated evenly), but friends of mine who are have told me that gingerbread is one of the easiest things to make and that short of letting it burn it is pretty much foolproof.

Homemade gingerbread men to give to people who you feel obligated to give something but not anything expensive, a gingerbread house (or village, if you "get into it") to decorate and display, and yummy gingerbread cake with cream cheese icing to eat.

Dang, now I've gone and given myself a hankerin' for some gingerbread.
