Steaks - Is there a doneness between medium and medium rare?

For me, medium is too done and medium rare is too rare.

Haven't heard of such a thing, but maybe the equivalent compass point would work.

The hoity-toity steakhouses call that "medium-rare plus" or MR+ on the ticket. The really fine establishments write down "138" on the ticket with a circle around it. Go to the likes of Outback, or Black Angus, it's all just dumb luck anyway, whatever you say.

I say, when I want a good steak, I'll cook it myself. Costco prime NY and ribeye is a darn starting point.

To step up home cooked steak, try using a kamado style grill. The first time I grilled steak on mine, my boys both asked what I did differently. They both thought the steak tasted better than ever.

This.

We discovered sous vide a couple of months ago. Last weekend I cooked a turkey breast at 145 degrees for 4 hours. Really good.

Sous-Vide.

America's Test Kitchen says 130º for a minimum 90min to a maximum of 3hrs, brown 60s a side.

I've yet to give it a go, but that will be my baseline.

That was a great episode of ATK, how to suos-vide steak and eggs.

I'll do a steak or eye round roast sous vide for up to 24 hours at 131ºF. The result is that all the fat melts away (as well as any gristle) and, the meat is bright pink edge to edge and as tender as pot roast. yum smiley
