In short, because Apple Says SO.

However, there are hacks around it. If you can run Catalina you can run Big Sur. But you have to do Weird Things.

I'm guessing, but it seems to me the "obsolete" macs are the ones that Big Sur dropped from support. If Apple discontinues all hardware service for Macs of a certain age, it likely follows that any software service (in terms of new OS support) would also follow. I'll be following to see if there's another reason.

I believe Apple calls it 'Vintage', which is unsupported.

Does anybody have any idea how well Big Sur will run on a Late-2012 mini?

Apple's official, general statement seems to be they want a good user experience with any given Mac and OS, and they apparently believe that it won't provide that.

It also may be that Intel is no longer providing security update firmware or some other hardware bit doesn't have much future.

Should you chose to accept this mission, Jerry®, let us know how you fare.

I'm guessing the video card isn't Metal compatible.

I think that's a very good guess.

dosdude has hacks to install Mojave & Catalina on several nonApple supported Macs including 2012 Mini's.
I suspect he is working on a hack for Big Sur.
Go to his page periodically especially after Big Sur is released to the masses

I'd guess that once it's officially released, dosdude1 will provide a hack.

GREAT guess, but not correct. 2012 macs are Metal compatible.
