Yum, although a bit too rare for me. (I make mine with the cheaper ground chuck.)

looks delish.... hopefully no hot date after all the bleu chees =)

cant tell -- but i always do a light toast on the bun so it doesnt soak up all the juices and get soggy

I still don't understand the need to make any sandwich SO BIG that you can't really take a bite of it. You and Guy Fieri . . . I will say it looks great and great prep! I would probably be deconstructing it yo consume it!

Nicely done, but my jaw doesn't unlock.

On the opposite side of the thickness format, I've been getting into making smash burgers. My kids think they're the best kind of burger at the moment. Stacked, they're quite good.

But I've been eating very little beef these days, and since its impossible for me to make them but not eat them, they are a rarity.

Bristol Farms sells a lot of perfectly trimmed prime meat, and the trimmings end up as patties. They sell ‘em for $5 each, rather than by the pound, w/ min weight being 8 oz.. Depending on who’s manning the patty station, they’re mostly closer to 10 oz.. IOW, they’re big to start with, and we just go with it. It can be messy to eat, depending on how you accessorize it. Spousal unit’s and my jaws don’t unlock, but we don’t mind the mess, since the result is well worth it. Baby Buzz does have Guy Fieri’s eating talent, so that can be fun to watch. His GF, as you can see, went the minimalist route this time, but she’s dealing w/ some dietary issues, so hers was the easiest to deal with this time around.

I will say, when the patties are closer to 8 oz., they’re more manageable, and when they’re big like last night, I’m often tempted to reform them into a couple of 5 oz’ers. They don’t weigh ‘em, it’s just by quantity. When they go on sale, the pattymakers tend to crank ‘em out closer to 8 oz./each, but when they’re at the full $5, they drift upsize a bit more.

In the 3rd pic you can see the remnants of our seasoning goo. We start w/ fresh ground applewood smoked salt and black pepper about 45 mins before cooking. Last night's goo, IIRC, had smoked paprika, cayenne, cumin, coriander, thyme, NM chili powder and a couple more in a couple of teaspoons of fairly tame hot sauces, a dash of liquid smoke (the good stuff), and a bit of Med blend oil to get to desired consistency. The goo is smeared on a few mins before the burgers hit the grill. Last night I hit 'em w/ a pinch of tarragon, but we've got a myriad of herbs, so as whatever feels right at the time can find its way onto the patties while they cook.

That (Oahu) Cheeseburger in Paradise pic was taken w/ the then brand spanking new Canon S1is... it arrived two days before we left. I got a similar pic of the kid at CIP in Maui a couple of years later, w/ either the S2 or S3..., gotta dig that one up off the cMP (which is hibernating for the summer).
