what if I keep it in the oven at 125F (and add moisture to prevent drying). How long can I keep it?

Not sure what pizza you have, but we will stack thin pizza in layers to go into the ziplock bag. Or, we have re-usable larger containers with lids we can use. It's harder with deep dish, but day-old deep dish also tastes great (cold or re-heated) as it's more like a casserole.
