Was about to pull the trigger on this, but we don't cook a lot of meat so I am wondering how often it would get used.

can be used for more than meat. Are the potatoes done? How hot is that water? mmm baked apples with brown sugar and cinnamon.

Sign up for the Thermoworks newsletter/emails. They will probably put the ThermoPop on sale at some point (holiday shopping?) Save money, it's still a fairly expensive thermometer.

Thermapen® is nice stuff, but there are plenty of thermometers that will do the job, for a lot less dough.
Thermapen will calibrate the thermometer for you, but for <~$25 you can get something similar that you can calibrate yourself, and will perform just as well. Basically, unless you're a 3 or 4 Michelin Star Chef, or a total kitchen klutz, it's not gonna make a lot of difference.... a decent (less expensive), properly calibrated thermometer will be, at worst, within 1° of the Thermapen. If you're klutz, and can't calibrate a thermometer, and/or know/tell that it's off; ante up for a Thermapen. If your cooking is so tight, that you have to be as spot on as possible; ante up for a Thermapen. For the masses in between, one of these best sellers (or similar) will do just fine.

Ice water and boiling water. I think it even says so in the instructions. I have a Thermoworks which is only slightly slower to read than the Thermapen and costs a fraction of the price.

My sister got me a Thermopen, for my custard (ice cream making) and fermenting/sourdough mostly. I don’t cook or eat meat.

Whatever you get, make sure it's a thermocouple device.

I bought one for smoking meat... Love that it's "instant on"... But yet, tons of other options as well.

I've got one for BBQ, too, but it's got the Blue tooths! Very handy to have the probe in the meat on the grill and watch the temp from inside the house.
