Other yogurt — really good yogurt with active cultures and flavor you like — for starter.

I had a yoghurt maker. The end product was OK. Starter was 1/2 cup of plain yoghurt with live/active cultures.

Other plain yogurt. Mixed it into the milk and left it (in its own container, silly!) on the kitchen counter, covered with a cloth. Of course it was a warmer day.The speed at which the milk was converted depended on how much yogurt you added. It was just okay, nothing special.

Instant Pot (mine does not have a yogurt setting)

Add a gallon of milk
turn on saute
Stir as the milk heats to 195F
add sugar stir to dissolve
pour into a bowl in a cold water bath
Reduce temp to 112
Stir in a cup of good quality yogurt as the starter
spoon into mason jars and seal with plastic lids (not pressure lids)
Water bath at 104F for five hours (I put the sealed jars in our hot tub)

Done

Instant Pot
Farm Life milk, a bit of starter yogurt, and a can of condensed milk. Easy, peasy!
