Is there any argument to be made for the i3 at this point? I mean it is less expensive, what if that model is actually enough computer for your tasks? Is it worth it to everyone to spend more on the M1?

There was never an argument to be made for the i3.

I could get decent performance out of it as a secondary DNS server for a small office.

The i3 would need a memory upgrade to be usable IMO. That alone would negate the savings. Plus, why would someone buy a machine that was outdated before the M1 was released. The M1 should be a viable machine for years, the i3 not so much.

I'd bet that's true. When we were at Costco looking at the Apple Watch 6 there was a couple who were discussing the Apple Watch 6 vs. the 3 and the guy was telling his wife that they're exactly the same watch except the 6 has a bigger screen. And that's not worth $130 that Costco was charging for the 6 vs. the 3. I dunno if he was just blowing smoke and trying to save the money but he certainly sounded like he really thought there was no difference except the screen size. I'd imagine he'd be the perfect Costco Apple Mac mini i3 buyer!

My sister is a daily Mac user and would likely be better served for the i3 version where the software is likely stable. She would not really notice the speed difference during the next 3-5 years.
