Eggs were on sale about 3 weeks ago and I bought 2 cartons. Thought I'd bake. Never got around to it.

Got the new eggs mixed up with a half-used carton that I already had which was pushing a month old at the time.

So, I just went to make some eggs and saw that the best-buy date on the carton that I grabbed was April 8th.*

Perfect opportunity to try the egg-floating test: If they float in a bowl of water, they're bad.

As a control, I put one of the newer eggs in the bowl first. It sank.

The old eggs all floated. They floated very well. When pushed down to the bottom of the bowl and released, they shot right up.

Six eggs. Right into the trash.







*Also, the packed-date was Feb 12th. Meaning that the eggs could have been pushing 3 months old already when they reached their "best by" date nearly a month ago since (Googled this to check) it can take up to 30 days for eggs to get packaged from the farm.

My father in law used the 'waterglass' (sodium Silicate or calcium hydroxine) method of preserving freshly laid eggs. For up to a year. In the root cellar in the basement.

I have never heard of this! I just crack an egg and smell it. That will tell you right away...

The water method lets you know the eggs are old - the moisture in the albumen has evaporated to a degree, leaving air in its place; they may still be edible, though.
The smell test is more accurate for for rotten eggs, though.
Even more accurate is eating them and see if you vomit or end up in the hospital with salmonella.

I prefer to throw them away if they fail the water test.
My wife prefers the eating test.

.....have heard that this works to detect witches too.......dunk them and see if they float....
