Number Two Son Nathan wants a 16" MacBook Pro. He's been told it will be significantly better than the current model with the Intel processors. True?

He's doing a fair amount of video editing and 'multitasking'.

Worth waiting for the M1 version?

When? Likely later this year?

Better? Yes. The current M1 MBA with 8 cores (my Better Half has one) is as good or better video editing than my 8 core i9 2019 16" MBP with 64GB RAM. Really.

I can only imagine how well and M1X or M2 will smoke the Intel machines.

No need to be "told" -- watch. Literally *thousands* of YT videos showing the M1 crushing video work.

Would assume any work would be done on a nice external 27" 4K screen?

How about a mini + screen and a 13" MBP for remote work? Combined would be less $ than a single 16" MBP. (old or new)

This guy can be a bit much, but worth the watch for your kid: [www.youtube.com]

Reportedly, the delay is due to delays in production of the microLEDs for the screen.

It would be a good idea to see what the status of all programs that he is using to see if they can run on the M1 chip. That includes the plugins and extensions for same programs. Some more esoteric apps and plugins are not being modified to run on the M1, especially older but functional versions. There are a lot of shareware and small company video plugins which may not make the jump to M1 anytime soon. One of my employers has a site license for Rhino (albeit not video editing) 3D version 6 (25 seats). It works perfectly for their workflow. But Rhino announced they ar not going to upgrade 6 to run on the M1 (it is not compatible with Rosetta.) (Their current version is 7.) So they are staying with Mac intel and their egpu setup. My three cents.
