Stilltasty.com says to use within two weeks of opening, but that it can also be frozen.

Did I mention that I made my first batch of Instant Pot lasagna last night? Dang, that was good ... definitely not healthy, but incredibly tasty ... and will continue to be so for at least the next three nights. yum smiley

I'm thinking to use up the remainder of the ricotta ... cheesecake, which I've heard is pretty easy via Instant Pot.

Cooking it (it's sort of half cooked milk as is) will significantly extend it's fridge life.

Take cooked macaroni pasta, mix with favorite sauce, mix ricotta with an egg and some spices and herbs. Bake at 325 for about 35m.

Try mixing 1 part of homemade pesto with 2 or 3 parts ricotta cheese for a vegie lasagna.

You can layer it with tomato sauce and ricotta for a nice complementary color look.

Ricotta cheese should be thrown at as soon as leaving the store. Just look for nearest trashcan .
