Try a bit of bacon or beef jerky tied tightly with thread onto the snap trap trigger. Something that makes the rodent tug at it... SNAP!

Copper wool (won't rust like steel wool). COMPLETELY fill the crack with copper wool and maybe cover that over with a sealant.

I think those are one of the cruelest ways to trap any animal, and you still have to kill them after they are stuck.
A rat zapper worked well for use to kill a few rats we had inside a pantry, where the cats couldn’t get to them.

So, thanks for your help and suggestions. Here's my plan: lay a few snap traps (baited w peanut butter, which mice seem to love) for a few nights to (hopefully) decrease the population. Wife is worried about the local chipmunks, but I think they are less nocturnal, and might be able to get out of a mouse-sized snap trap.
After the count goes down, I'll either find some copper wool and caulk it in, or mortar it closed (which I'm less certain about having a good cosmetic result, unless I get a mortar tube and some premixed stuff).
I'll let you know how it goes.

And then seal it up. One of those small driveway sealer bottles should do it.
