If you cut it all up it gets cold, which negatively affects the flavor IMHO.

I've never had much interest in "real" steak, which seems basically one step removed from beef jerky. Lots and lots of chewing for a bit of umami.

Now chicken-fried steak, well, that's a tastier matter. That's eaten a bit at a time, so it can be properly enrobed in delicious cream gravy.

I suspect you've just had poor quality, overcooked, steaks... But I do agree that a good chicken fried steak is pretty darn delicious!

Actually, I've only seen that done twice, so assumed it was some rare abnormality, didn't know it was a thing.

I'm confused. I don't see where anyone in this thread has ever mentioned anything but white/cream gravy.

Now the gravy on a lovely steak au poivre is brownish . . .

The only exception to this that makes sense to me is if the steak will serve multiple people.

I agree... but, it can also be a saving grace for thoroughly mediocre steak if it's a good gravy or sauce. But, to sauce/gravy a good piece of steak like a fine Ribeye, New York, or Filet? A crime against man and nature...

A 6-8oz sirloin sous vide @ 130F then seared on a +500F cast iron
'grill' pan. Rest for 5min, slice and plate on a hot serving plate with
veggies. Never experienced "cold" steak with this method.
If cooking rare, then yes you will have cold steak. Even served intact, hot
to plate a thick, 8oz sirloin will get cold before you finish it.

If it’s “just” steak, I prefer a lean cut; NY Strip, a quality sirloin etc cooked just past rare. I can tell the quality just by slicing into it. A steak knife should glide through the beef with almost NO resistance.

Hey Rolando, does the Alamo Cafe by the SAT airport still exist? They made an awesome chicken fried steak! I once flew from NOLA NAS to SAT just to have one and I'll never forget that steak.
