Calling Paul F. Roasts left out

I left two 10lbs uncooked Pork Butt roasts out on the counter for 8 hours. Went shopping at 10pm and forgot to put them away. They were probably around 65 degrees when I threw them in the fridge in the morning as that was the room temp in the house.

They were pre packaged vacuum sealed in thick plastic bags, not just shrink wrapped meat, but still guessing that they are destined to be dog food. He will eat well for a week or two....

Your roasts are just fine. They are now slightly aged. Bacterial growth will be confined to the outer surface so as long as that surface gets over 180°F, you’ll be just fine.

I too, agree with Speedy...

Cook them soon, to a proper internal temperature, and - poof... no problems. I would not let them age long in the fridge now, though.

I would eat them. I would brown the outsides, which I do anyway for the flavor.

pork butt makes great pulled pork. cook it, then freeze it is freezer bags. pull one out, and let it thaw in fridge. now eat. easy meal prep at that point.

Smoke it low and slow to 205°, that'll melt out all of the connective tissue, wrap in butcher paper w/ a blanket around 'em and stuff 'em in a well insulated cooler til they hit ~160°, then pull 'em all while they're still hot. Portion what you don't eat right away, and freeze the portions after they cool down. Oh, and it'll be safe to eat after that.

They are probably safe and I would eat them if trapped on a desert island with nothing else to eat, but food poisoning is really unpleasant. I would throw them out and go buy some fresh ones.

Beef would be safer than pork for sure. Pork goes rancid quickly, but in this case if the meat was fresh to beginwith, and it's smoked, it will "probably" be fine. Also, I'm not a food scientist, so take it for what you will. Just a cook.

Too bad there isn't a cooking class one could take to learn how to test for specific bacterial or toxin growth in meat and other food products, along with a 'home cooking' line of microscopes, and whatever other kit might be needed.

I bet a lot of food is wasted under the Better Safe Than Sorry practice.

Sure, like COVID, it's better to prevent it than diagnose it, but accidents do happen.

If I were local, I'd drive right over and get them. My 10 qt InstaPot will make short work of those. Be pulled pork by the end of the day.

Yes, there is a 10qt InstaPot. I also have an 8qt CrockPot.

In the InstaPot, 90 minutes on pressure cooker, then finish off for another 90 minutes or so on the slow cooker setting, then clean out the gross fatty bits, and shred the rest.

No way I am telling what is in my dry rub. But it is dry, and I do rub it in.

I love to rub my meat. Massage it good. Really good.

Lately my cheat for pulled pork, or any pork, is to smoke for a few hours, take off grill/smoker and then pressure cook in a little water, and char in broiler or grill for a sear.

It technically belongs to my partner's little brother. But since both of her brothers have Traeger smokers, I guess it's mine now.

I really should give it a go with a pork shoulder or picnic cushion, then into the InstaPot. Apple or cherry wood probably. My partner is allergic to tree nuts, so pecan or others are not an option. If I could score some peach, I'd smoke some chickens.
