Zagg is normally a really good company.
All that said, a 40mm cover would protect nearly 100% of the screen, and the edges of the S7 as well as the face are supposed to be tougher than the S6.
And giving the steep curve of the glass, I wonder if a 41mm plastic protector that ships flat would stay on the curve of the crystal without lifting up and peeling off.
When I put protectors on my 'Tags, they didn't lie flat. I had silicone cases and put the 'Tag in the holder backwards so the silicon back held the protector flat over night.
End result, perfectly flat adherence to the 'Tags curve surface, with no lifting at all.
You might want to consider doing something similar for the Watch, regardless of what cover you decide on.
