When I eat Baked Beans, I'm just being polite

I love the heck out of beans, I just don't like them sweet. If you went through the trouble to prepare them and put some on a plate, you'll never know I didn't like them. In fact, I'll praise them.

I don't like beans much, unless they're in chili or baked, or they're stringed.

Van Camp's Pork and Beans were my goto for many many years.

Then they disappeared for a time, and B&M filled in.

They resurfaced but changed their formula, and I was disappointed.

I see Van Camp seems to have several versions and now Costco has one and I got a four-pack, so well see how that goes.


I've always disliked anybody's homemade baked beans because there was always too much molasses used, and often too much brown sugar as well.

Ugh.

But I'm nothing if not polite, ask anybody.

I'm curious as to how much molasses y'all use. I like mine tangy, so twice or more as much of both mustard and ketchup added to baked beans as molasses.

Black beans, small red beans fixed simply with flavor not sweetness.
Baked beans are just disgusting.

my brother-in-law was providing security for an American Embassy function in Honduras. They had a large buffet and he and others were invited to indulge. He saw these big trays of boston baked beans and heaped them on - then he tasted them. He said it was the worse thing he had ever had. He told us that the Honduran cooks laughed at the faces of the locals that tasted them.

I don’t eat meat though, so if that have some tasty bacon in there, please pick that out first. grinning smiley

Measurement is usually done by eye, so these are approximate-

1 15 oz can pork & beans

1/4 cup yellow mustard (I don't particularly like regular yellow mustard and have tried fancier varieties, but plain old yellow really is best in this dish. Bottom shelf, whatever is cheapest, generic or store brand, is perfect)

1/4 cup Heinz ketchup (Hunts ketchup is way too sweet, other brands vary. Heinz is consistent)

2 tablespoons molasses

1/2 large-ish yellow onion, cut into 1/2 inch or less pieces

1/2 pound hickory smoked bacon strips

Fry up half the bacon to soft doneness, then cut it into 1/4 inch-sized pieces.

Sautee the onions in the bacon grease until clear. (This part is optional. I can't stand crunchy onions but like the onion flavor, and the bacon grease is right there in the pan already hot so... )

Mix all ingredients except the remaining bacon well and place in a pyrex dish. Lay remaining bacon strips flat on top of the beans. Bake at 350 until bacon on top is done.

Edited to add: It's been a while since I prepared this recipe, and the more I thought about it, the surer I became that it calls for regular pork & beans rather than Bush's baked beans. My bad, I fixed it.

Personally Bush's don't qualify for me to consider them baked beans. They are what used to be called "pot beans", mostly cooked up in a stove pot and Bush's just passes them through an oven enough to call them "baked".

In Massachusetts they had to amend state law to allow Bush's to be sold in the state as baked beans. There were minimum requirements for length of baking that Bush's was nowhere close to meeting. Bush's said they would sue, the legislature caved.

Personally for commercial baked beans I prefer B&M. They prepare and cook the beans properly and long enough to break down most of the gas producing compounds in the beans for my digestion.

B&M here, too. You can't take the New England outta me, although I think they're owned now by a Southern company. Same recipe, it would seem.

B&M is now owned by B&G Foods, headquarters in NJ. B&G Foods acquired B&M from Pillsbury, not sure of the ownership before that.

B&G started out in Manhattan as Bloch & Guggenheim, makers of pickles and other pickled products. Now their strategy is buying up orphaned brands and keeping them in production.
