Defrosting frozen fish?

I want some Costco tilapia for lunch tomorrow, so I'm defrosting it tonight, in the fridge.

Previously, it's been stated here and on some Costco salmon packaging that the fish should be removed from it's vacuum sealed pouch and put on a plate, maybe covered with a paper towel (?) to thaw overnight or so.

But this article basically says it can be left in the pouches as is, and safely thawed overnight.

Is that correct?

It would certainly be more convenient.

I usually do it in the pouch it came in.

Leave it in the pouch in the fridge overnight and then finish it in the sink.

This is what I do. It thaws really quickly in the pouch in the sink.

I just bought the Whole Foods Market cooked salmon, which I found very tasty. It says to thaw it in the refrigerator, in the pouch, for 24 hours.

I thaw in the vsp overnight then sous vide (125°F) in the same pouch.
Finish in the broiler with Kerrygold butter, white wine, & lime slices.

If you're still here on Wednesday, we'll know it's OK to thaw in pouch....

Enjoy your lunch.

We buy the individually wrapped frozen salmon, and I used to thaw but now I jut plop the fish out of the plastic straight into a hot pan. Leave the lid on, flip a few times and cook until internal temp of 160 min. This method seems to give good results in that the outside can get crispy without really overcooking the inside. I image this would work for any type of fish, but can't say I've tried.

Lunch was good.

Two tilapia portions, salt, pepper, Kerrygold.

Pouches rule.
