Occasionally I cook dinner at my parent's house. Their oven doesn't get warm enough for my taste. It never has but they've never been concerned with it. IMO, if you're not putting a crisp on your roast with high heat....what are you doing?? Anyway, I'm making the turkey so I care. The oven is set to 500°F (convection) with the internal temp compensation set to 30°F - both are the highest values accepted by the oven. My trusty Thermoworks temp probe tells me that its seen a high of 466°F. So its not getting warm enough but not by a ton. I'm tempted to try to fix it.

Perhaps I should see if I have the same problem on regular bake. That might indicate a problem with the temp sensor.

Any thoughts?

Hm, I set it to 500°F on regular bake and it hit a high of 546°F. I need to do another attempt with convection bake. Maybe only convection bake is low.

I was wondering that. Could be compensating for a faster cooking time under convection settings, so it drops the actual temp to give consistant cook times comparable to non convection recipes.
