this was not the standing roast recipe I was expecting

I was expecting the type that blasts a roast at high heat (500 or so) for a while and then slowly cools down with the oven OFF for a few hours. It's classic because it works and isn't really super dependent on temp or time. Restaurants do this because it's easy and results are reliably good.

This video is far more controlled for both temp and time, which is OK so long as your oven actually does what it says it does (most do no, test first.)

most places around here that make a roast beef (using top round), do exactly that and have for decades.
(What I didn't know until a decade ago, was that the roast beef sandwich was sort of a regional thing in these parts.)
