I have two LG 24" displays, 1920 X 1080 max, input choices
are DVI and HDMI.
Mac Mini to #1 is to HDMI of course. But, TB Dock has DP output;
4096 X 2160 max.
Would it matter if I use DP to HDMI cable or use a DP to DVI cable?
(have both, nothing to buy)

My Mac M1 mini has a higher resolution output on the HDMI than on the DVI, me thinks.

The dock can't send more pixels than it receives.

It depends on several things, the age of both the monitors and cables, and the relative quality of each.

HDMI can be good up to 4K 165 Hz. Are you expecting the whole chain to be HDCP compliant?
