Banana pancakes with chopped walnuts.

2 eggs per one banana just prior to banana bread stage. A little salt and baking powder. Mash up the banana before adding eggs.

They're very delicate so keep them small so they don't fall apart when you turn them. A couple of tablespoons per pancake.

I just top them with some butter and a little powdered sugar so that the banana flavor shines through.

I've worked with a similar recipe, without the nuts, and they're pretty darn good!
Adding a dash of vanilla extract and pinch of salt pumps them up, flavor wise, too.

I just throw in any brownish bananas into my regular recipe. I'm just trying to use stuff up.

Good with pecans also.

Pancakes with finely chopped apples (or applesauce) and nuts are good as well.

I like a little cinnamon and/or nutmeg and a splash of vanilla extract as well.

Looks awesome but allergic to both, so I will instead go for some beer 'n blueberry pancakes.

I read about this style of "pancakes" in a book about Robin Lee Graham. Popular in Fiji, and uses coconut too, fried in palm oil.

I do that with French toast.

And sprinkle with a little cinnamon, too.

My partner is somewhat allergic to cinnamon, we rely on nutmeg, freshly ground on a microplane grater.

My wife does not like bananas so these wont' fly here. Guess I'll stick to my persimmon pancakes which I find to be quite tasty.

If you have a good box grater, there is usually a super fine grating section on the bottom. I findthat works much better than the Microplane for nutmeg
