Waaaaa! Mold in my pure maple syrup!

So I was about to pour some Signature (Safeway brand) pure maple syrup on my waffles when I saw some little bits floating on the top, inside the bottle.

They'er several little mold islands.

Now, most mold won't kill one, or even make one sick.

So I could man up and just ignore and pour.

Or, at the very least, pour until the mold is gone, and use what's left.

But I'll pass.

Deduct a punch from my Mac Card, I don't care.

What I need to know is why?

This has never happened in all my years of using syrup, be it Log Cabin, Mrs. Butterworth (never again) Eggo, Aunt Jemima, whatever.

Does genuine maple syrup lack preservatives, mold blockers, what?

It's about time to hitch up the team and make a light provision run.

If the great Canadian Maple Syrup Robbery and/or COVID hasn't jacked up prices prohibitively, I'll get some more.

But I don't want to spoil it again, so I'm wondering what happened.

Any thoughts?

#1, "real" maple syrup should be fridged.
It should never have preservatives.
When I used to go to the sugar shack as a kid, they'd put a pinch or cream in the boil. Dunno the chemistry, but that was the "preservative".
Dunno if that is still done.

I'd have poured it thru a larger hole strainer and give it a bit of heat.
Portion by portion. Heated "real" syrup is the way to go ... anyway.
A lil' butter and a wee Grand Marnier or bourbon.

OBTW, both TJs and CostCo "real" syrup are quite good. I believe both are Canadian.

I've never had "real" get mold. Is it possible someone (not pointing fingers) had a wee from the jug? Or poured back in what was "left over" after a "taste"? That's the only was I can of bacteria getting in to cause mold in "real".

And is it really mold or perhaps islands of sugar? Like honey, "real" will sugar up after a time.

It's not unusual to have a little mold on maple syrup. when it's not fridged.

Years ago, I used to see labels on the cans and bottles telling purchasers to skim the mold off the top and enjoy, or optionally skim the mold off and then immerse the the can or bottle in water and gently boil to kill off anything left in it. (Don't boil a plastic jug.)

i learned this lesson just a few months ago. yes, real maple syrup needs refrigeration. even says so on the bottle which i saw after discovering the mold.

I've never 'fridged syrup, ever.

But after examining the back label with a 30x loupe, yes, Refrigerate after opening.

Lesson learned.

Butter doesn't always need refrigeration, real maple syrup does.

My world turned upside down.

Not that it matters to me, but does 'unsalted' butter have any salt for that purpose?

Sadly, I have to say a block of Kellygold does not last long enough to grow mold, and I'm careful to keep bread and toast crumbs out of it.

As the warmer weather approaches, it'll go back to spending time in the 'fridge.

Maybe some salt in my syrup, retard mold, and a salted caramel bent to boot.


Yeah i've boiled mine when I saw mold, but it's a messy prospect.

There's not enough for me to bother with the tedium and mess, so I'll buy more as my penance.


And don’t forget to put it in the fridge.

Butter doesn't easily get moldy because -- like maple syrup -- it has low water content.

It will spoil after exposure to light and warm air causes the fat to degrade, but that's not the same thing as going moldy. It's just rancid.

I have had butter go moldy twice here in Seattle. Only with old butter when it has been very hot in the house for a very long time.
