You can save the client a lot of cash with a standard 27" monitor if that is good enough - best to find out.
I've got a 2017 27" imac sitting next to a $200 standard 27" screen. SIde by side, the difference is clear, but many eyes won't know the difference otherwise.

There are no M1 iMacs larger than 24", and those are not M1 Max or better. Outlook is fuzzy on larger M1 iMacs.

They start at $699 instead of $1999 so you'll have a lot more budget for a nice screen. THe minis will whip the pants right off of the imac - even if it's an i7.

Unless you really need more than 16 GB of ram, like I did.
I say replace with 2020 refurb iMacs. Not sure the models you have, but Base 6 core models start at $1299 with 8/256.

Couldn’t you just use the old iMacs as displays for the new Macs?
Not since the 2014 model, IIRC. I couldn’t use my Late 2015 iMac as the display for my M1 mini.
