I've been using a FoodSaver since sometime in the 1990s; the model I have is no longer made, but from looking at their current offerings, the "FM2000" appears to be the equivalent today.

The accessory port allows use of bottle and mason jar sealers (I make extensive use of both, for wine and items that are better suited to be in a jar vs. in a bag).

I also remember hearing about the "OutOfAir" vacuum sealer bags somewhere and how they're supposed to be better than what you can buy from FoodSaver, but haven't gotten around to procuring any yet (still have more than enough bags on hand). If I were starting from scratch, I'd give them a try.

My step dad used several for fish up in Alaska, and they all seemed to work pretty similarly. Which was really well, and they got a ridiculous workout. I believe we added a piece of paper towel around the fish first, but I don't know exactly why, except that it improved the outcome somehow (related to freezer burn or something?). The fish were flash frozen and I have to say they stayed reasonable fresh for as long as it lasted (maybe a year).

They looked cheaper than the one SD linked to, so I bet that one would work great. I see some pretty fancy looking ones, but I bet they're overkill. It just needs to suck and seal, ya know.

I picked up a Foodsaver vacuum sealer at a yard sale two years ago and use it all the time. There are two things in my kitchen that I would run out to replace the same day if they broke: my vacuum sealer and my air fryer - vacuum sealer first.
That says it all.

These are the bags I use rather than Foodsaver bags: Amazon

I have an Anova sealer that came with my Sous Vide. It does help stuff last, even things like chips because you can reseal the bag (without using the vacuum feature).

While it does not work quite as well, you can also get the same effect using the immersion method and ziplock bags. Just put your food in the bag, lower it into water until just the zipper is out, then seal it. The water displaces the air. That method is what I use for items that have liquid in them (like marinades).

My partner's brother and sister-in-law have several. When they get to processing game meat/fish, or when they process their chickens, they have to alternate because they get hot.

Absolutely get 3rd party bags.

Absolutely recommend, have used for years. Went on multiple fishing trips, and everything that was caught was filleted and bagged immediately on return to land.

Basic FoodSaver vac, have gone through a couple and replaced the heating element on units a couple of times as well. No bells & whistles needed smiling smiley

And I *highly* recommend this brand of bags.

Another "yea" vote here. Costco sells both the sealers and the replacement bags; if you are a member, be sure to include their offerings in your research.

If you logically think about this, when you purchase an entire cry o vac packaged pork loin at the store, it's essentially an industrial Seal a Meal.

At the aerospace company, we had a bunch of industrial ones hardware would get packaged in, along with a desiccant pouch, for storage of a decade or so. If they trust 5 figure hardware to it, your salmon will be safe!

Just be careful not to get caught in it.
