Advice on recording interviews for archive-VIdeo? Audio? Mixer?

An organization I'm involved with wants to record interviews with some of the members for an archive we're setting up.

My initial thought is to record a 4K video with an iPhone on a tripod, with a lavalier mic for the subject and a lavalier mic for me (conducting the interview), with some kind of mixer between the lapel mics and the iPhone. Any thoughts on how plausible this is, or what kind of mixer to get?

Alternatively, I'm thinking of just doing an audio recording. In that case I'm thinking one of the Zoom recorders and a pair of XLR mics. Any thoughts on that?

My partner is a singer, during the pandemic we shot video on the iphone and used second system sound. I have the ability to record 4 pro grade tracks(in this case only using one). Final results were professional broadcast quality after the various performers were combined.

Is this just spoken voice? What is the final format? What does the organization expect?

dunno much about the audio of an iPho. I assume they have a mic or line level jack?

I'd suggest a 4 mic chan mixer, if only for the possibility of more humans at once. Some have USB outputs that perhaps could be used with the lightning connector.

From what I have read and experienced, a very big component of good audio recording is the environment/space where the audio is recorded. The type of microphone and the support equipment for it will be different depending on what environment.

Outdoors, windy, ambient noise, echo-filled room?
Well-treated indoor quiet space?
Is the interviewee comfortable dealing with a lapel mic or is prone to brushing against it or talking well away from it?

I'd settle first on what recording space and mics before planning more into equipment that needs to drive the mics.

If you decide to record audio only, take photos/stills of the subject. Then hit them with "Ken Burns" effect?

I'll just add that depending on your location, you might be able to rent equipment.
