I guess I'd lean toward metal lath but its really about closing the hole to your satisfaction.

A mouse can squeeze through a hole as small as the diameter of a pencil. TIGHT metal lathe is a good suggestion but pretty much anything metal (copper wool etc) that will COMPLETELY FILL the hole should stop mice from chewing through at that location. There may well be more than one point of entry that needs to be sealed off.

You might want to give your cat a good brushing and collect the fur. Spread the fur at locations that indicate mouse activity. The cat's scent should help in keeping mice away (and your cat will probably love the attention and grooming).

that clown gets groomed often. Not too much hair cept in spring.
wouldn't put his hair where they were entering as it's pots pans and flour drawers. so far dishes of white vinegar has kept them away, but that will evaporate.

I haven't been to homies or lowes yet, but they both stock lath I'm hoping is like the old school stuff I used to see.
Just hate dealing with lath as one has to be very careful and gloved. That stuff is very sharp, especially where one cuts pieces.
Looking forward to bending myself into 4 to get into the back of them cabinets.

One more thing the contractor dropped the ball on.
